Indulge in the extraordinary creation of Alchemist Edwin Noreña – a yellow
bourbon, fermented with citra hops, and sourced from the exquisite Finca
Campo Hermosa, Colombia. This year's rendition proves to be nothing short
of exceptional.
Edwin, a fervent fermentation enthusiast, directed his curiosity towards the
intersection of hops and coffee fermentation, resulting in this remarkable
lot. A wild-tasting offspring born from innovative inspiration, this coffee
undergoes a 120-hour anaerobic fermentation within the cherry. After
de-pulping, it returns to the old anaerobic fermentor for an additional 96
hours. Edwin introduces a distinctive twist by incorporating hops and malt
during the second fermentation.
The outcome is a coffee that defies norms and stands in a class of its own.
From the very first sip, the palate is graced with pronounced "hoppy" flavors,
reminiscent of the beloved citra hops often associated with trendy brewery
offerings. What distinguishes this brew is its impeccable balance, seamlessly
intertwining hoppy notes with a delightful tropical fruit sweetness and an
underlying sugary rock candy nuance. In the realm of coffee-tasting
